tagine


it's a clay pot and can be used either on the stove top (medium low), in the oven or over a fire.  we first saw one on (i think it was...) an Anthony Bourdain show done in Morocco in a very rustic setting.  Jim said he wanted one, so i filed that wish away and brought it out again at xmas and got him one.  a rather selfish thing on my part really as i thought it would be a good addition to our kitchen.  he used it (finally) this week and cooked up a really fine meal of chicken, potatoes, carrots, onions, and olives... and it took about an hour over medium low on the stove top.  it was a great meal!  and now i'm on the hunt for some recipes!  highly recommended after just one experience with it.  thanks, Tony!

i'd love to know about any recipes that anyone has for this!

Sandy, I have had a tagine for many years. I love it, but I use mine in the oven at about 450 degrees. Mine is made by Emile Henry. Don't know if yours can go in the oven. There are some great recipes on the internet. One I love is "Lamb Tagine" at AllRecipes.com. I sometimes substitute chicken for the lamb. I also found a tin of tagine spices at Williams Sonoma and coat the meat with the spices and let it marinade for several hours. Have also cooked salmon in my tagine on a bed of cilantro and dill and added lots of veggies around. Love that you can put everything in the tagine and then forget about it until it is done.

Lori - when you cooked salmon in your tagine, did you have any problem with lingering fishy smell in the tagine? as much as i love salmon, i really hate the smell of fish. just wondering if the clay pot absorbs the smell.

Hi, Sandy -- had no problem with fishy smell. My tagine, like yours I think, is glazed. I put the salmon on a bed of either dill or cilantro. Then laid lemon slices over the salmon and distributed sweet peppers, other veggies around. Maybe that helped. But I have not had any problem with the pot absorbing any odors. Happy cooking! Now . . . I think I may have to cook something in my tagine for dinner tonight. You got me going.

Lori - no, ours is unglazed (the pic here is from the internet). if it gets stinky i suppose baking soda might help. enjoy your tagine dinner!
